Ingredients

1 1/4 Pounds Pork Tenderloin

1 teaspoon Mustard, Dry Ground

1 1/2 teaspoons oregano, Dry

1 1/2 teaspoons cumin
-
1 teaspoon Salt
-
Juice of 1 Orange
-
Juice of 1 Lemon
-
20 oz. refrigerated cheese tortellini
-
8 oz. 1/2-3/4″ cubes cooked pork tenderloin
-
8 oz. 1/2-3/4″ cubes honey glazed ham
-
4 oz. 1/2-3/4″ cubes salami or chopped sliced salami
-
6 oz. 1/2-3/4″ cubes Swiss cheese
-
1-pint cherry tomatoes halved
-
2/3 cup chopped Dill pickles
-
3 tablespoons chopped pickled jalapenos or more to taste

1/4 of a small red onion thinly sliced
-
2 cups packed roughly chopped romaine lettuce
-
2 tablespoons chopped cilantro

Directions
Pork Tenderloin
Sprinkle the seasonings (Ground mustard, Cumin, Oregano, Salt) all over the pork tenderloin.
Squeeze the orange and lemon juice into the crock pot and place the pork in.
Put the lid on and cook on low for 6 hours.
- Cut into small cubes and cool.
Pasta Salad
Cook the tortellini according to package directions just until al dente. Do NOT overcook. Drain, rinse with cold water, and add to a large serving bowl.
Add the remaining salad ingredients; Pork tenderloin, Honey ham, salami, Swiss cheese, tomatoes, pickles, jalapenos, red onion, romaine lettuce, and cilantro to the bowl along with the Grandma Hoerner’s Mojo Sauce. Toss until well coated. Chill in the refrigerator for at least one hour. When ready to serve, give it a good mix and enjoy!
