Grilled Beef Tenderloin

Take a large beef tenderloin and slice horizontally to make a nice deep slit. Sprinkle the inside of the pocket with McCoy’s Real Meat Seasoning. Stuff the pocket with sliced grilled poblano peppers and onions, along with provolone cheese.
Tie the tenderloin with cooking twine, wrap with grill wire, or pin with metal skewers to keep all the stuffing’s securely inside.
Rub the entire outer portion of the tenderloin with McCoy’s Real Meat Rub. Place onto the grill and cook to your liking.
